Gar-Chick-Saus Penne with Pepps and Onions




Sunday again already!  And you KNOW I loves me a hearty meal to end the week right;)  If you can do it in a healthier way, even better!  While this recipe does have pasta in it (a rarity in our lives these days), I chose the healthiest pasta possible and made sure there was a lot of protein included to help break down those carbs.  Also, it's so quick and easy-perfect for whipping up for company, as we did tonight!  Enjoy in moderation.




     Serves 2-4 (I doubled to serve 4 with leftovers)

  • 1 box penne pasta (preferably a whole wheat, flax, or veggie variety-look for moderate carbs, more fiber/protein content)
  • 1 pack nitrate-free chicken sausage of your choice, sliced (i used garlic flavored)
  • 1 jar tomato sauce of your choice (or homemade!)-i used a jarred olive oil/garlic/basil
  • 1 1/2c shredded italian cheese of your choice
  • 1 green pepper, chopped
  • 1/2 yellow onion, chopped
  • 2T chopped garlic
  • 2T olive oil
  • Sprinkles of parm

  1. Heat pan with olive oil to medium and add sausage until heated through
  2. Add pepper, onion, and garlic to soften veggies
  3. In the meantime, bring water in large pot to a boil and cook pasta approx 10 mins (follow box instructions)
  4. Strain pasta and return to pot
  5. Pour tomato sauce and add cheese over pasta
  6. Add pan contents and stir all
  7. Scoop to serve and top with some parm!

Enjoy with a side spinach salad filled with veggies of your liking and perhaps a nice dry red.  Make it your own and please share any moderations! Stay Chic, Stay Healthy;)
